Last evening was a true “throwback” in a couple senses of the word. First, I was invited by my ol’ pal to come to his extremely successful “Cupcake Lair” to catch up on old times and to demonstrate making a juice and smoothie for his YouTube channel. And secondly, what better juice to demonstrate than my favorite “basic” red juice which helped powered me through 45 days of drinking only juice throughout this year?

Bubba (Jeremy) and I go waaaaay back, as you can see in the photos above. Over 20 years ago, we attended high school, toured and played in a band, caused general havoc and went to many Hardcore shows together. As life usually has a tendency to do, we both did our thing (jobs, kids, marriage, travel, etc) and fell out of touch for some time but randomly checking in on social media and such. Nowadays, Bubba co-owns Hardcore Sweet Custom Cupcakes, run by him and his gracious wife and baker, Nicole (who really gets the credit for the AWESOME tasting cupcakes!). Their menu boasts 100+ varieties of cupcakes and at least 40 are completely vegan! I’m sure you’re surprised to see me writing about cupcakes, given my usual posts, but I actually had the pleasure of tasting my first cupcake (in over 8 months!) and it was amazing. Rich, decadent and, of course, VEGAN! Obviously, that will also be my last taste for a while…but it’s these kind of “tests of resolve” that keep me that much stronger!


In addition to running the bakery storefront, kitchen and food truck, Bubba does a great deal of cross-promoting, events and booking with Hardcore music festivals (where pretty much everyone knows and supports him). Just last year, Hardcore Sweet auditioned for a spot on Food Network’s “Cupcake Wars”…got on…and WON! The episode had them racing against the clock, making crazy vegan cupcake concoctions to win over judge, metal icon and horror filmmaker, Rob Zombie. After winning, the press and promotion opportunities skyrocketed Hardcore Sweet into a whole new level of success. I’m very proud of Bubba and his family and continue to wish them more success in the future.

On the other side of the coin, Bubba’s journey had been keeping him so busy, in fact, he was burning out a bit and gaining more weight due to all of the travel and touring. He came up with an idea for a documentary called “100 Days of Hardcore” in which he set out to capture footage of his successes in losing some of the extra weight (all while on the road with the cupcake truck attending festivals, shows and other events). Through it all, he shed 70+ pounds! Fantastic!


As a follow up to filming his documentary, Bubba wanted to learn more about what I’ve been doing for my health and weight loss and asked if I’d demonstrate a juice and smoothie for his YouTube channel. That said, I threw it back to when I started juicing and made him my favorite rich, Red Beet juice. I also made him a basic Green Smoothie. He was surprised at how amazing both of them tasted; especially after seeing how much green stuff I packed into both (I may have won him over on juicing!). Be on the lookout for the video sometime in the near future. In the meantime, here is the recipe that I made for Bubba; it’s my favorite Red Juice EVER!!!!

Red Beet, Carrot, Celery, Kale, Orange, Red Apple, Lemon, Ginger

2 Red Beets (with greens if possible)

2 Stalks of Celery (with greens)

3 Carrots

5-6 large leaves of Kale

1 Orange (peeled)

1 Red Apple 

1/2 Lemon

1-1 1/2 inches of Ginger

Wash all ingredients well and prep for juicing. Juice all in your Juice Extractor. CLEAN YOUR JUICER AND AREA BEFORE DRINKING. Enjoy!
